Аминокислоты, не синтезируемые высшими позвоночными и получаемые ими непосредственно из пищи. Для человека это изолейцин, лейцин, лизин, метионин, фенилаланин, треонин, триптофан и валин.
Отличаются от аминокислотного остатка наличием дополнительного атома водорода на одном конце и дополнительной гидроксильной группы на другом.
